  • 1/2 cup mascarpone cheese
  • 1 tsp vanilla extract
  • 1/4 cup brewed coffee (for syrup)
  • 2 tbsp sugar (for syrup)

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, instant coffee, cocoa powder, and a pinch of salt.
  3. In another bowl, cream together butter and sugar until fluffy. Add the egg and vanilla extract; mix well.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Scoop dough onto prepared baking sheets, leaving space between each scoop.
  6. Bake for 10-12 minutes until edges are golden but centers are soft. Cool on racks.
  7. For the syrup, heat brewed coffee with sugar until dissolved; let cool slightly.
  8. To assemble, spread mascarpone on one cookie half, drizzle with cooled syrup, and top with another cookie half.
