  • 1 tablespoon sesame oil

  • 1 cup fresh pineapple (diced)
  • 1 ripe pear (diced)
  • 1/4 cup red onion (finely chopped)
  • 1 jalapeño pepper (seeded and diced)
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro (chopped)
  • 8 small flour or corn tortillas
  • Optional toppings: shredded cabbage, sliced avocado, chopped cilantro, lime wedges

Instructions

  1. In a bowl, mix teriyaki sauce, minced garlic, honey, sesame oil, salt, and pepper. Add chicken strips, coat well, cover, and refrigerate for at least 30 minutes.
  2. Preheat grill over medium-high heat. Grill skewered pineapple for 2-3 minutes on each side until caramelized.
  3. Grill marinated chicken strips for 3-4 minutes per side until cooked through and slightly charred. Let rest before slicing.
  4. Combine diced pineapple, pear, red onion, jalapeño, lime juice, cilantro, salt, and pepper in a bowl to make the salsa.
  5. Warm tortillas for about 30 seconds on each side on the grill or in a skillet.
  6. Assemble tacos by filling tortillas with chicken and topping with pineapple pear salsa.
