  • 500g chicken breast, cubed
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • 1/2 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tsp grated ginger
  • 1 tsp cornstarch + 2 tbsp water (for slurry)
  • 2 cups broccoli florets
  • Salt for boiling
  • 1 cup jasmine or basmati rice
  • 2 cups water
  • Pinch of salt

Instructions

  1. Cook rice in salted water until fluffy (10-15 minutes). Drain if necessary.
  2. Steam broccoli for about 5 minutes until tender-crisp. Set aside.
  3. In a skillet over medium heat, sauté cubed chicken in olive oil with salt and pepper until golden brown (6-8 minutes).
  4. Combine soy sauce, honey, rice vinegar, garlic, ginger, and brown sugar in a bowl. Add to skillet with chicken and simmer for 2-3 minutes.
  5. Stir in cornstarch mixed with water; continue cooking until the sauce thickens (1-2 minutes).
  6. Serve chicken over rice with steamed broccoli on the side.
