  • 3 cloves garlic
  • 1 inch ginger
  • 2 tablespoons lemon juice

  • 1 teaspoon cumin
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1 pound boneless skinless chicken thighs
  • 1 cup mango chunks
  • 1 cup mozzarella cheese
  • 4 pieces naan bread
  • 1 medium red onion
  • 1/4 cup fresh mint
  • 1/4 cup fresh cilantro

Instructions

  1. In a mixing bowl, combine yogurt, minced garlic, grated ginger, lemon juice, paprika, cumin, garam masala, and cayenne pepper. Mix well.
  2. Add chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat your grill pan or outdoor grill over medium-high heat.
  4. Grill the marinated chicken for about 6-7 minutes on each side until cooked through. Let it rest before slicing into thin strips.
  5. On each naan piece, spread mozzarella cheese evenly. Top with sliced grilled chicken, mango chunks, red onion slices, mint, and cilantro.
  6. Bake on a baking sheet in a preheated oven at 400°F (200°C) for about 8-10 minutes until the cheese melts and the naan becomes crispy.
  7. Allow to cool slightly before slicing and serve warm.
