  • 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
  • 4 cups kale, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, grated
  • 1/4 teaspoon ground nutmeg
  • Olive oil, for greasing
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes into uniform rounds.
  3. In a skillet over medium heat, sauté the chopped kale with a splash of water or olive oil until wilted (about 5-7 minutes).
  4. Grease a baking dish with olive oil.
