  • 4 medium bell peppers
  • 2 tablespoons extra virgin olive oil
  • 1 large onion (chopped)
  • 3 cloves garlic (grated)
  • 1 cup rice
  • 1 can (15 ounces) lentils (drained)
  • 1 can (15 ounces) diced tomatoes
  • 2 cups vegetable broth
  • Fresh Italian parsley (chopped)
  • Lemon wedges

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté chopped onion for three minutes.
  2. Add rice, grated garlic, ground coriander, turmeric, and red pepper flakes; sauté for one minute.
  3. Pour in vegetable broth and add lentils and diced tomatoes. Season with salt and black pepper. Simmer until most liquid is absorbed (about 10 minutes). Stir in chopped parsley.
  4. Preheat oven to 350°F (180°C). Halve the bell peppers and remove seeds; sprinkle with salt.
  5. Fill each pepper half with the rice-lentil mixture. Place in a baking dish and bake for about 40 minutes or until tender.
