  • 1 box stove top stuffing mix
  • 1 cup diced onion
  • 2 eggs
  • ⅓ cup milk
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat oven to 350°F and line a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine ground beef, stuffing mix, diced onion, eggs, and milk until well mixed.
  3. Lightly spray a loaf pan with nonstick cooking spray, pack the mixture tightly into the pan, then invert onto the baking sheet.
  4. Bake uncovered for about 40 minutes.
  5. In the meantime, prepare the sauce by mixing ketchup and vinegar together.
  6. After 40 minutes, spread the sauce over the meatloaf and return to the oven for an additional 10-30 minutes until fully cooked (internal temperature reaches at least 160°F).
