  • 1 ½ lbs skirt steak
  • 1 lb purple cabbage
  • 1 large red pepper
  • 1 large poblano pepper
  • 1 red onion
  • olive oil
  • kosher salt
  • 12 corn tortillas
  • 6 oz queso fresco
  • ½ cup freshly squeezed orange juice
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • ¾ cup neutral oil

Instructions

  1. Preheat the oven to 425°F.
  2. Roast the vegetables: Place halved peppers and onion on a sheet pan with olive oil; roast for 35-40 minutes. Roast cabbage on another pan for about 25-30 minutes until caramelized.
  3. Prepare the steak by patting dry and letting rest.
  4. Make the chipotle sauce by blending orange juice, zest, chipotles, honey, and neutral oil until smooth.
  5. Combine roasted vegetables and green onions in a bowl with half of the chipotle sauce.
  6. Sear the skirt steak in a hot cast iron skillet for about 3-5 minutes per side; let rest before slicing against the grain.
  7. Assemble tacos with roasted slaw, steak, chipotle sauce, and crumbled queso fresco.
