  • 1½ cups potato starch
  • ½ cup warm water
  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar
  • 2 tablespoons gochugaru
  • 2 tablespoons minced garlic
  • Neutral oil for drizzling

Instructions

  1. Boil the peeled and cut potatoes in salted water until fork-tender (10-15 minutes). Drain and mash in a heatproof bowl.
  2. Mix in potato starch until well combined, then knead into a cohesive dough.
  3. Gradually add warm water while mixing until absorbed.
  4. Shape the dough into ½-inch thick noodles and boil in batches until they float (about 1 minute). Transfer to cold water to cool.
  5. Prepare chili oil by combining minced garlic, gochugaru, soy sauce, black vinegar, and hot oil.
