  • 2 tbsp gochujang
  • 1 tbsp gochugaru (or chili flakes)
  • 1/2 tbsp soy sauce
  • 1 tsp rice apple vinegar
  • 1/2 tbsp sugar
  • 1/2 tsp toasted sesame oil
  • 1/2 cup water
  • 2 tbsp neutral oil (divided)
  • 2 packs enoki mushrooms
  • 1 clove garlic (minced)

Instructions

  1. In a small bowl, mix gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, water, and optional Buldak sauce until smooth.
  2. Trim the roots of the enoki mushrooms and rinse them gently under water; pat dry and break into smaller bundles.
  3. Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook half the mushrooms for 1-2 minutes on each side until golden brown; remove and repeat with remaining mushrooms.
  4. Add another tablespoon of oil to the skillet, sauté minced garlic for 30 seconds until fragrant. Pour in the sauce mixture and bring to a simmer.
  5. Return cooked mushrooms to the pan and cook uncovered for 3-4 minutes until well coated and slightly thickened.
