  • 250 g Mascarpone cheese
  • 400 ml Heavy cream
  • 3 EL Powdered sugar
  • 0,5 Ampulle Vanilla extract
  • 150 g Frozen raspberries
  • 3 TL Powdered sugar (for raspberries)
  • Spekulatius cookies
  • Milk (for soaking)
  • Frozen raspberries (for topping)

Instructions

  1. In a mixing bowl, combine heavy cream, mascarpone, powdered sugar, and vanilla extract. Whip until stiff peaks form.
  2. In a saucepan, heat frozen raspberries with powdered sugar until they reach a liquid consistency.
  3. Dip speculoos cookies briefly in milk and layer them in a serving dish.
  4. Spread half of the whipped cream mixture over the cookies and drizzle raspberry sauce on top.
  5. Repeat layers with remaining cookies and cream mixture. Finish with more raspberry sauce and garnish with whole raspberries.
  6. Chill for at least 2 hours before serving.
