  • ⅛ teaspoon salt for frosting
  • 1½ cup powdered sugar (icing/confectioners sugar) for frosting

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, combine flour, baking powder, baking soda, and salt.
  3. In a stand mixer, cream together softened butter and sugar until light and fluffy.
  4. Add the egg and almond extract; mix until well combined.
  5. Gradually add the dry ingredient mixture until just combined.
  6. Scoop dough onto prepared sheets, spacing them about 4-5 inches apart.
  7. Bake for 8-11 minutes until edges are set but centers remain soft. Cool on wire racks.
  8. For the frosting: In a medium bowl, combine ¾ cup softened butter, ½ teaspoon almond extract, ⅛ teaspoon salt, and 1½ cup powdered sugar. Mix until desired consistency is reached.
  9. Frost each cookie with the prepared buttercream frosting and decorate with sliced almonds, if desired.
