  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Pat the lamb shoulder dry and rub it generously with sea salt and black pepper.
  3. Sprinkle the chopped herbs evenly over the meat and arrange halved garlic cloves around it in a roasting pan.
  4. Roast the lamb in the preheated oven for approximately 4-5 hours until an internal temperature of at least 195°F (90°C) is reached. Baste occasionally with pan juices.
  5. Remove from oven and let it rest for about 20 minutes before carving.
