  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons olive oil
  • 5 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. In a large mixing bowl, combine beef cubes with balsamic vinegar, salt, black pepper, Italian seasoning, and smoked paprika. Toss until evenly coated.
  2. Place halved baby potatoes at the bottom of the slow cooker. Drizzle with half the melted butter and olive oil, then top with minced garlic.
  3. Layer the seasoned beef cubes on top of the potatoes and drizzle with remaining butter and olive oil.
  4. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours until the beef is fork-tender and potatoes are cooked through.
  5. Gently stir before serving and garnish with fresh parsley.
