  • 12 stalks celery, chopped
  • ½ medium yellow or white onion, chopped
  • 45 cloves garlic, minced
  • 3 cups baby spinach
  • 4 cups low-sodium chicken stock
  • 1 cup cream or half-and-half
  • 1 package potato gnocchi (about 16 oz)
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon Italian seasoning
  • Salt and black pepper to taste
  • Pinch red pepper flakes (optional)
  • 12 tablespoons cornstarch

Instructions

  1. Place chicken thighs or breasts in the slow cooker along with chopped carrots, celery, onion, garlic, and seasonings.
