  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper, to taste

Instructions

  1. Prepare the ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a skillet over medium heat, add coconut oil and sauté onion until translucent (about 5 minutes). Stir in garlic and ginger; cook for another minute.
  3. Transfer the mixture to a slow cooker and add beef cubes, curry powder, turmeric, cumin, cayenne pepper (if using), salt, diced tomatoes, coconut milk, and tomato paste. Mix well.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.
  5. Serve hot over rice or with crispy fries.
