  • 1 cup diced red peppers
  • 1 cup sliced carrots
  • 1 cup diced celery
  • 1 (15-ounce) can tomato sauce (no added sugar)
  • 1 (15-ounce) can fire-roasted tomatoes
  • 1 (15-ounce) can black beans (rinsed and drained)
  • 1 (15-ounce) can kidney beans (rinsed and drained)
  • 1 (15-ounce) can pinto beans (rinsed and drained)
  • 2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon mild chili seasoning
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice
  • 2 tablespoons optional hot sauce

Instructions

  1. Wash and chop all vegetables.
  2. In the slow cooker, layer chopped onions, diced red peppers, sliced carrots, and diced celery.
  3. Pour in the tomato sauce and fire-roasted tomatoes.
  4. Add rinsed black beans, kidney beans, and pinto beans.
  5. Season with garlic powder, ground cumin, mild chili seasoning, smoked paprika, and salt. Stir well.
  6. Cover and cook on low for 4 hours or high for 2 hours.
  7. Stir in fresh lime juice just before serving.
