  • 1 egg

  • 1 tablespoon lemon zest
  • 1/2 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for frying)
  • 1/2 cup mayonnaise (for lemon aioli)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest (for lemon aioli)
  • 1 teaspoon garlic (minced)
  • Salt and pepper to taste (for lemon aioli)

Instructions

  1. In a large mixing bowl, combine chopped shrimp, panko breadcrumbs, mayonnaise, egg, parsley, Dijon mustard, lemon zest, Old Bay seasoning, salt, and pepper. Mix until well combined.
  2. Shape the mixture into small patties (about 2 inches in diameter) and place them on a lined baking sheet.
  3. In a frying pan over medium heat, add olive oil until shimmering.
  4. Fry the patties for about 4-5 minutes on each side until golden brown. Remove from the pan and drain on paper towels.
