  • 1 cup finely ground almonds
  • 1 cup grated parmesan cheese
  • 3 tbsp melted unsalted butter
  • Pinch of black pepper
  • 250g ricotta cheese
  • 150g crumbled feta cheese
  • 2 large eggs
  • 2 tbsp Greek yogurt
  • 1 garlic clove, grated
  • Zest of lemon
  • Black pepper, to taste
  • 1 cup halved cherry tomatoes
  • 1 tbsp olive oil
  • 1 tsp fruit vinegar
  • 1 tsp honey
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 340°F (170°C) and grease a springform pan.
  2. In a mixing bowl, combine ground almonds, parmesan cheese, melted butter, and black pepper. Press into the prepared springform pan and bake for about 10 minutes until golden brown. Let it cool.
  3. In another bowl, mix together ricotta cheese, feta cheese, eggs, Greek yogurt, garlic, lemon zest, and black pepper until smooth. Pour into the cooled crust.
  4. Bake for about 30-35 minutes until set but slightly wobbly in the center. Cool completely at room temperature before chilling for at least two hours.
  5. For the roasted tomato jam, toss cherry tomatoes with olive oil, fruit vinegar, honey, salt, pepper, and optional chili flakes; spread on a baking sheet and roast at 355°F (180°C) for about 30 minutes until softened. Mash lightly after roasting.
  6. Once chilled, top the cheesecake with roasted tomato jam before serving.
