  • 2 medium beets, peeled and cubed
  • 1 large sweet potato, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup toasted walnuts
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 2 tablespoons chopped fresh dill

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the cubed beets and sweet potatoes with olive oil, salt, and pepper until well coated.
  3. Spread the vegetables on a baking sheet in a single layer and roast for 25–30 minutes or until tender, stirring halfway through.
  4. While the vegetables roast, prepare the yogurt dressing by whisking together Greek yogurt, lemon juice, honey, minced garlic, and dill in a separate bowl until smooth.
  5. Once the vegetables have cooled slightly, combine them in a serving bowl with crumbled feta cheese and toasted walnuts. Drizzle with yogurt dressing just before serving.
