  • 2 ½ cups dry macaroni noodles (cooked)
  • 1 cup diced turkey (corned beef replaced)
  • 1 cup cubed Swiss cheese
  • 1 cup drained sauerkraut
  • 1 cup diced dill pickles
  • ¾ cup thousand island dressing
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon sauerkraut brine

  1. Cook macaroni according to package directions. Drain and rinse under cool water. Set aside to cool.
  2. In a small bowl, whisk together thousand island dressing, mayonnaise, Dijon mustard, and sauerkraut brine.
  3. In a large bowl, combine cooled pasta, turkey, Swiss cheese, sauerkraut, pickles, and dressing. Toss until evenly coated.
