  • 1 tbsp lemon zest (finely grated)
  • 4 tbsp maple syrup

  2. Gently melt the creamed coconut in a heat-proof bowl over hot water until smooth.
  3. Blend in the raspberries, lemon zest, and maple syrup until well combined.
  4. Press the mixture into the prepared loaf pan evenly and chill until set (about 2 hours in the fridge or 20-30 minutes in the freezer).
  5. Once firm, lift out using cling film and slice into squares or triangles.
