  • 4 ounces cream cheese
  • 1¾ cup almond flour
  • ¼ cup coconut flour
  • ⅓ cup sugar substitute (1:1 sugar ratio)
  • 1 egg
  • ½ cup raspberry preserves (sugar-free)
  • 2 eggs
  • 1 cup sugar substitute (1:1 sugar ratio)
  • ½ teaspoon almond extract
  • 2½ cups unsweetened flaked coconut

Instructions

  1. Preheat the oven to 375°F and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, cream cheese, butter, and sugar substitute until crumbly. Add one egg and mix well.
  3. Press the mixture into the bottom of the prepared pan and bake for 15 to 20 minutes until golden brown.
  4. While baking, whisk together two eggs in another bowl; then mix in the sugar substitute, almond extract, and unsweetened flaked coconut until combined.
  5. Spread raspberry preserves over the baked crust. Pour the coconut mixture on top evenly.
  6. Bake again for 20 to 25 minutes until the top is golden brown. Allow to cool before cutting into squares.
