  • 1 cup black olives (halved)
  • 1 orange bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1/2 cup red onion (finely diced)
  • 8 oz mozzarella pearls
  • 3/4 cup olive oil
  • 1/4 cup red apple vinegar
  • 2 tablespoons organic lemon juice
  • 1/4 cup finely freshly grated Parmesan
  • 1 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3/4 teaspoon salt
  • 1/2 tsp oregano
  • 1/2 tsp paprika powder
  • 1/2 tsp pepper
  • 1/2 teaspoon sugar

Instructions

  1. Cook the rotini noodles in salted boiling water until al dente. Drain and rinse under cold water.
