  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175 degrees Celsius. Grease and flour a small springform pan (20-22 cm).
  2. In a mixing bowl, beat the eggs with the brown sugar until fluffy. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix briefly.
  3. In another bowl, combine all dry ingredients and fold them into the wet mixture until just combined.
  4. Pour the batter into the prepared springform pan and bake for 25 minutes uncovered. Cover lightly with foil and bake for an additional 20 minutes or until a toothpick inserted comes out clean. Allow to cool.
  5. For the glaze, sift powdered sugar into a bowl, mix in milk and maple syrup gradually until smooth, then spread over the cooled cake.
