  • 6 slices turkey bacon
  • 4 sweet onions
  • ½ cup apple cider
  • 2 sheets frozen puff pastry
  • 1½ cups ricotta cheese
  • 1⅓ cups pumpkin purée
  • 2 cups grated mozzarella cheese
  • Fresh sage leaves

Instructions

  1. Cook turkey bacon in a large skillet over medium heat until crispy; set aside.
  2. In the same skillet, caramelize sliced onions with salt and pepper for about 25–30 minutes until golden. Add apple cider and cook for another 5 minutes.
  3. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface; place on parchment-lined baking sheets, score edges, and prick the center.
