  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds or set aside ramekins.
  3. In a mixing bowl, whisk together heavy cream and granulated sugar until combined. Add egg yolks one at a time, whisking until smooth. Stir in vanilla extract, pumpkin puree, spices, and salt until blended.
  4. Pour the mixture into prepared mini pumpkins or ramekins, filling them three-quarters full.
  5. Place containers in a baking dish, fill with hot water halfway up their sides, and bake for about 30 minutes until just set.
  6. Cool to room temperature and refrigerate for at least two hours or overnight.
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a kitchen torch.
