  • 1.5 cups pumpkin puree
  • 1 sweet onion, diced
  • 2 cloves garlic, minced
  • ½ tablespoon fresh thyme, chopped
  • ½ cup freshly grated parmesan cheese
  • 2 cups freshly grated havarti cheese
  • 1 cup arugula
  • Extra virgin olive oil

Instructions

  1. Preheat the oven to 350°F. If using a pizza stone, place it in the oven.
  2. In olive oil, caramelize half of the diced onions over medium-low heat until translucent, adding sugar halfway through.
  3. In a mixing bowl, combine pumpkin puree, minced garlic, diced shallot, thyme, remaining onions, and parmesan cheese; season with salt and pepper.
  4. Prepare the pizza dough as per package instructions and shape into a circle.
  5. Spread the pumpkin mixture on the dough; top with caramelized onions and arugula. Sprinkle with grated havarti cheese.
  6. Bake according to dough instructions (10-12 minutes for soft crust or up to 25 minutes for crispy).
