  • 1/2 cup vegetable oil
  • 1/2 cup plain yogurt
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large bowl, mix together the flour, chopped pistachios, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, vegetable oil, yogurt, milk, vanilla extract, and lemon zest until well combined.
  4. Gently fold the wet ingredients into the dry ingredients until just mixed; avoid overmixing.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool for 10 minutes before transferring to a wire rack to cool completely.
  8. For the glaze, mix powdered sugar with fresh lemon juice until smooth and drizzle over cooled bread.
