  • 1 can (4 oz) diced green chilies
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp ground cumin (optional)
  • 1/2 tsp smoked paprika (optional)
  • Salt and black pepper, to taste

Instructions

  1. In a large pot over medium heat, brown the ground beef. Drain excess fat.
  2. Add the diced onion and cook until softened, about 3–4 minutes.
  3. Stir in chili powder, cumin (if using), smoked paprika (if using), salt, and black pepper.
  4. Pour in the pinto beans, diced tomatoes with green chilies, diced green chilies, and beef broth; mix well.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for about 30 minutes.
  6. Taste and adjust seasoning as needed; mash some beans against the pot for a thicker texture if desired.
  7. Serve hot, garnished with chopped cilantro or lime wedges if desired.
