Ingredients

Scale
  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 10 tablespoons unsalted butter (melted)
  • 32 oz cream cheese (room temperature)
  • 1 1/2 cups brown sugar
  • 3/4 cup sour cream (room temperature)
  • 4 large eggs (room temperature)
  • 2 teaspoons ground cinnamon
  • 2 1/2 cups pecans (chopped)

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, brown sugar, and melted butter in a mixing bowl. Press firmly into a 9-inch springform pan and bake for about 10 minutes until golden. Set aside to cool.
  2. In a large bowl, beat the cream cheese until smooth. Gradually add brown sugar, mixing until combined. Add sour cream and vanilla extract; mix well. Incorporate eggs one at a time.
  3. Gently fold in heavy cream, cinnamon, and chopped pecans into the mixture. Pour half over the cooled crust.
  4. Spoon dollops of remaining filling on top and swirl for a marbled effect.
  5. Bake for about 75 minutes or until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours or overnight.
