Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • 1 cup fresh or canned peaches (diced)
  • ½ cup unsalted butter (for frosting)
  • 1 cup packed brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar
  • ½ teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until combined.
  5. Gradually add dry ingredients to the wet mixture, stirring until just combined. Gently fold in diced peaches.
  6. Pour batter into the prepared pan, smoothing it out evenly.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow cooling completely before frosting.
  8. For the frosting, melt the butter in a saucepan over medium heat. Stir in the brown sugar and cook for 2-3 minutes until it dissolves smoothly.
  9. Add milk to the mixture; bring it to a boil then remove from heat. Let it cool slightly before whisking in powdered sugar and vanilla extract until smooth and creamy.
  10. Once the cake is cooled, spread the frosting evenly over the top.
