  • 3/4 cup PBfit peanut butter powder (divided)
  • 2 tablespoons water
  • 1 cup almond flour
  • 1/4 teaspoon baking soda
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. In a mixing bowl, combine 1/4 cup PBfit powder with 2 tablespoons of water until smooth.
  3. Add the remaining ingredients: 1/2 cup PBfit powder, almond flour, baking soda, honey, vanilla extract, and egg. Mix until well blended.
  4. Form dough into 1-inch rounds and space them at least 2 inches apart on the cookie sheet.
  5. Flatten each cookie to about 2 inches in diameter and create crisscross indents on top using a fork.
  6. Bake for 7-9 minutes until lightly golden. Cool on the cookie sheet for 5-10 minutes before transferring to a wire rack.
