  • 1 pound chicken sausage (or turkey sausage)
  • 21/4 cups mirepoix (3/4 cup diced carrots, 3/4 cup diced celery, 3/4 cup diced yellow onion)
  • 1 tablespoon minced garlic
  • 2 (15-ounce) cans diced tomatoes (fire-roasted preferred)
  • 2 (32-ounce) cartons reduced-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • Salt and pepper
  • 2 cups uncooked miniature farfalle pasta
  • 4 cups fresh baby spinach (coarsely chopped, lightly packed when measured)

Instructions

  1. In a large pot over medium-high heat, warm 1 tablespoon of olive oil and brown the chicken sausage until crumbled and cooked through. Set aside.
  2. Sauté the mirepoix in the remaining olive oil until tender, then add minced garlic and cook briefly.
  3. Stir in diced tomatoes, chicken broth, and seasonings; bring to a boil.
  4. Add uncooked farfalle pasta and cook uncovered until tender.
  5. Return the chicken sausage to the pot and stir in chopped spinach until wilted.
