  • 3 tablespoons olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 5 cloves garlic, minced
  • 3 cups tomato sauce
  • 4 cups chicken stock
  • 15 ounces fire-roasted tomatoes
  • 1 tablespoon Italian seasoning
  • 1 cup dry ditalini pasta
  • 15 ounces red kidney beans, drained and rinsed
  • 15 ounces cannellini beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add ground beef and cook until browned. Remove excess fat.
  2. In the same pot, add remaining olive oil and sauté onions, carrots, and celery for about 5–7 minutes until softened.
  3. Stir in garlic and cook for an additional 30 seconds.
  4. Add chicken stock, tomato sauce, fire-roasted tomatoes, Italian seasoning, cooked meat, and ditalini pasta. Bring to a boil.
  5. Reduce heat and cover; simmer for about 15 minutes until pasta is tender.
  6. Stir in kidney beans and cannellini beans; cook until heated through.
  7. Season with salt and pepper before serving. Garnish with chopped parsley.
