  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. If using sausage, cook until browned, then set aside.
  2. Add chopped onion, carrots, and celery; sauté for 5–7 minutes until softened.
  3. Stir in minced garlic and dried herbs; cook for an additional minute.
  4. Pour in broth and crushed tomatoes; add beans (and sausage if using) to the pot.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Stir in ditalini pasta; cook according to package instructions until al dente.
  7. Season with salt and pepper to taste, then serve garnished with fresh parsley and grated Parmesan cheese.
