  • 1 pound lean ground beef
  • 1 ½ cups chopped yellow onion
  • 1 cup diced carrots
  • 1 cup sliced celery
  • 1 tablespoon minced garlic
  • 2 ½ cups tomato sauce
  • 3 cups low-sodium beef broth
  • 1 can (15 oz) crushed tomatoes
  • 1 cup uncooked gluten-free small pasta
  • 2 cans (15 oz each) beans (dark red kidney and cannellini), drained and rinsed

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Brown the ground beef until cooked through. Drain excess fat.
  2. In the same pot, sauté onions, carrots, and celery in more olive oil for about 5 minutes. Add minced garlic and cook for another 30 seconds.
  3. Add browned beef back to the pot along with Italian seasoning, sugar, salt, and pepper. Mix well.
  4. Pour in beef broth, tomato sauce, water, and crushed tomatoes. Bring to a boil then reduce heat to simmer until veggies are tender.
  5. Cook pasta separately until al dente; drain.
  6. Stir cooked pasta and beans into the soup. Adjust thickness with additional water or broth if needed.
  7. Serve hot with optional cheese and fresh parsley on top.
