  • 2 medium carrots (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 can (15 oz) cannellini beans, drained
  • 1 can (15 oz) kidney beans, drained
  • 1 can (28 oz) crushed tomatoes
  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 cup ditalini pasta

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery; sauté for 5–7 minutes until softened. Stir in minced garlic for 1 minute.
  2. Add drained cannellini and kidney beans, crushed tomatoes, chicken or vegetable broth, water, oregano, basil, red pepper flakes (if desired), salt, and black pepper. Stir well.
  3. Bring to a gentle simmer and cook uncovered for 10 minutes.
  4. Stir in ditalini pasta; simmer for an additional 8–10 minutes until al dente.
  5. Taste and adjust seasoning as needed before serving.
