  • 1 cup dry ditalini pasta
  • 1 pound extra lean ground beef
  • 1 large onion (about 1½ cups)
  • 2 medium carrots (peeled and diced)
  • 3 stalks celery (diced)
  • 4 cups chicken broth
  • 1 (28-ounce) can tomato sauce
  • 1 (15-ounce can) diced tomatoes
  • 2 teaspoons dried basil
  • 1 (15-ounce can) dark red kidney beans (drained and rinsed)
  • Salt and pepper to taste

Instructions

  1. In a skillet or using the browning function on your crock pot, cook the ground beef along with chopped onions, carrots, and celery until the beef is browned and vegetables are tender.
  2. Toss the dry ditalini pasta with olive oil and microwave on low power for about 3 to 5 minutes until blistered.
  3. Add cooked meat and vegetables into the slow cooker with toasted pasta. Pour in chicken broth, tomato sauce, diced tomatoes, basil, salt, and pepper. Stir well.
  4. Cover and cook on low heat for 2 to 3 hours or until pasta is fully cooked.
