  • 1 cup cooked white rice
  • 1 cup zucchini, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach
  • 2 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and cracked black pepper to taste

Instructions

  1. Season the salmon fillet with salt and pepper. Heat 1 tsp olive oil in a skillet over medium-high heat and sear the salmon for 3-4 minutes on each side until golden brown. Remove from heat.
  2. In the same skillet, add another tablespoon of olive oil and sauté minced garlic until fragrant (about 30 seconds). Add chopped zucchini and cook for 3 minutes until slightly tender. Incorporate halved cherry tomatoes and fresh spinach, stirring until the spinach wilts.
  3. Mix in the cooked white rice, seasoning with salt and pepper to taste. Heat through.
  4. Serve the salmon on top of the veggie rice mixture, adding a squeeze of lemon juice if desired.
