  • 2 cups cooked chicken (diced)
  • 3 cups unsalted chicken stock
  • 1 cup heavy cream
  • 5 garlic cloves (minced)
  • 2/3 cup grated Parmesan cheese
  • 1.5 cups shredded mozzarella cheese
  • 3 cups chopped baby spinach
  • 1 pint cherry tomatoes
  • Juice of 1/2 lemon
  • 1 teaspoon Italian seasoning
  • Salt and freshly cracked pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, cook orzo according to package instructions until al dente. Drain and set aside.
  3. In the same pot over medium heat, sauté minced garlic until fragrant. Add chicken stock and heavy cream; bring to a simmer.
  4. Stir in cooked orzo, chicken, Parmesan, spinach, tomatoes, Italian seasoning, salt, and pepper until well combined.
  5. Pour the mixture into an oven-safe baking dish and sprinkle with mozzarella cheese.
  6. Bake for 25–30 minutes until bubbly and golden on top.
  7. Let cool slightly before serving.
