1 lb chicken breast or thighs, cut into bite-sized pieces
2 cups fresh cheese tortellini
4 cloves garlic, minced
4 tbsp butter
1 tsp crushed red pepper flakes
2 cups chicken broth
1 cup heavy cream
1 cup grated Parmesan cheese
1 tbsp fresh basil or parsley, chopped
Salt and black pepper to taste
Instructions
Season the chicken pieces with salt and black pepper.
In a large pot, melt 2 tablespoons of butter over medium-high heat.
Add the seasoned chicken to the pot and cook until browned and cooked through (about 6–8 minutes). Remove the chicken from the pot and set aside.
In the same pot, melt an additional tablespoon of butter over medium heat. Add the minced garlic to the pot and sauté until fragrant (about 30 seconds). Stir in the crushed red pepper flakes.
Pour in 2 cups of chicken broth, scraping up any browned bits stuck to the bottom of the pot. Stir in 1 cup of heavy cream and bring it to a gentle simmer.
Add 2 cups of fresh tortellini to the pot. Cook for about 4–6 minutes, stirring occasionally until tender and heated through.
Return the cooked chicken to the pot with tortellini. Stir in 1 cup of grated Parmesan cheese until melted. Allow everything to cook together for another 2–3 minutes before serving hot.
