  • 12 ounces smoked sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 ½ cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)
  • Salt and pepper to taste
  • Fresh parsley and green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned, about 5 minutes.
  2. Stir in diced onion, bell peppers, celery, and garlic; sauté for another 5 minutes until softened.
  3. Add rice, Cajun seasoning, salt, and pepper; mix well to combine.
  4. Pour in chicken broth and bring to a simmer.
  5. Once simmering, add shrimp on top of the rice mixture, cover with a lid, and cook for 15–20 minutes until shrimp are pink and cooked through.
  6. Remove from heat; fluff the jambalaya gently with a fork. Garnish with chopped green onions and parsley before serving.
