  • 1 1/2 pounds Ground Beef
  • 2 teaspoons All Purpose Seasoning (divided)
  • 1 Large Onion (diced)
  • 4 cloves Garlic (minced)
  • 3 Carrots (diced)
  • 3 stalks Celery (diced)
  • 1 tablespoon Italian Seasoning
  • 1 Bay Leaf
  • 1/2 teaspoon Crushed Red Pepper
  • 15 ounces Cannellini Beans
  • 15 ounces Kidney Beans
  • 14.5 ounces Diced Tomatoes
  • 4 cups Chicken Broth
  • 1/4 teaspoon Salt and Pepper
  • 1 pound Ditalini Pasta (cooked)

Instructions

  1. In a large Dutch oven over medium-high heat, brown the ground beef seasoned with one teaspoon of seasoning; drain excess fat.
  2. Add the onion, carrots, and celery; sprinkle with remaining seasoning and sauté until softened.
  3. Stir in garlic, Italian seasoning, crushed red pepper, and bay leaf; cook for one minute.
  4. Return beef to the pot along with diced tomatoes (with liquid), beans, and chicken broth; stir well.
  5. Cover and simmer on low heat for about 20 minutes.
  6. Adjust salt and pepper to taste.
  7. Serve by adding cooked ditalini pasta to bowls before ladling hot soup over it.
