  • 15 oz Great Northern Beans (drained and rinsed)
  • 15 oz Kidney Beans (drained and rinsed)
  • 14 oz diced tomatoes
  • 8 oz tomato sauce
  • 2 tbsp tomato paste (diluted in about 4 tbsp water)
  • 1 cup onion (chopped)
  • 1.5 tbsp garlic (minced)
  • 3/4 cup carrot (cubed)
  • 3/4 cup celery (chopped)
  • 1 cup Ditalini pasta
  • 3 tbsp olive oil
  • Salt (to taste)
  • 1 tsp paprika
  • 1/4 tsp oregano (dried)
  • 1/2 tsp Italian seasoning (dried)
  • 1.5 tsp ground black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 6 cups chicken stock
  • Chopped fresh parsley (for garnish)
  • Extra virgin olive oil (for drizzling)

Instructions

  1. Set the Instant Pot to SAUTE on HIGH heat; add olive oil.
  2. Brown the ground beef until fully cooked.
  3. Add chopped onion and minced garlic; sauté for one minute.
  4. Stir in chopped carrots and celery; cook for another minute.
  5. Pour in chicken stock to de-glaze the pot.
  6. Add all seasonings, diced tomatoes, drained beans, tomato sauce, tomato paste mixture, and pasta; mix well.
  7. Cancel SAUTE function, close the lid, seal valve, and PRESSURE COOK on HIGH for four minutes.
  8. Perform quick pressure release; carefully open lid.
  9. Serve immediately with fresh parsley garnish and a drizzle of olive oil.
