  • 2 cups yellow onion (chopped)
  • 1½ cups carrot (diced)
  • 1 cup celery (diced)
  • 4 teaspoons garlic (minced)
  • 3 red potatoes (peeled and diced)
  • 2 12-ounce cans corned beef (crumbled)
  • 2 cups beef stock
  • 2 teaspoons Worcestershire sauce
  • 1¼ teaspoon English mustard (such as Colman's)
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons fresh parsley (finely chopped)

Instructions

  1. Prepare the pastry dough by mixing flour and salt, cutting in chilled butter and lard until crumbly, adding vinegar and cold water to form a dough. Refrigerate for at least 30 minutes.
  2. Cook the filling by sautéing onions, carrots, celery, and garlic in butter until softened. Add diced potatoes and crumbled corned beef; mix well. Stir in beef stock and simmer for about 10 minutes.
