  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup warm water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 8 ounces fresh mozzarella, cut into small cubes
  • 2 tablespoons chopped fresh rosemary leaves
  • 1/4 cup grated Parmesan cheese
  • 4 cups water (for boiling)
  • 1/4 cup baking soda

Instructions

  1. In a large mixing bowl, combine warm water, sugar, and yeast. Let sit for about 5 minutes until frothy.
  2. Add flour and salt; knead until smooth and elastic.
  3. Cover the dough with a cloth and let it rise for 30–45 minutes until doubled in size.
  4. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  5. Mix mozzarella cubes, chopped rosemary, and grated Parmesan in a small bowl for the filling.
  6. Divide risen dough into 8 portions; roll each into ropes, fill with mozzarella mix, fold over, and seal edges.
  7. Boil water in a saucepan; dissolve baking soda once near boiling. Dip each pretzel in the solution for about 30 seconds.
  8. Place on the baking sheet, sprinkle with Parmesan and garnish with rosemary.
  9. Bake for about 15–20 minutes until golden brown.
