  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 tbsp butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1 lb bowtie pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp all-purpose flour
  • 1/4 cup milk
  • Salt to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. In a large bowl, toss the chicken cubes with olive oil, Cajun seasoning, smoked paprika, salt, and pepper. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  2. While the chicken is cooking, cook the bowtie pasta according to package directions until al dente. Drain the pasta and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. In a small bowl, whisk together the flour and milk until smooth. Pour the flour mixture into the skillet with garlic butter and whisk constantly until it thickens slightly, about 1-2 minutes.
  4. Slowly pour in the chicken broth and heavy cream while whisking constantly to prevent lumps. Bring this mixture to a simmer; then reduce heat to low. Add softened cream cheese, 3/4 cup of mozzarella cheese, and Parmesan cheese. Stir until melted and smooth. Season with salt to taste and add a pinch of red pepper flakes if desired.
  5. Add cooked pasta to your cheese sauce and toss to coat evenly. Gently fold in your cooked chicken.
  6. Transfer your pasta mixture to a large serving dish or individual bowls. Sprinkle remaining mozzarella cheese over top. Broil in your oven on low for 2-3 minutes until melted and bubbly.
