  • 1 large red bell pepper (chopped)
  • One 15.5-ounce can black beans (rinsed and drained)
  • ¼ cup reduced-fat crumbled feta cheese
  • ¼ cup freshly squeezed lime juice
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • 2 tablespoons finely chopped fresh cilantro
  • 1 medium garlic clove (minced)
  • 1 teaspoon finely chopped fresh jalapeno

Instructions

  1. Wash all vegetables thoroughly. Chop the romaine lettuce, tomato, jicama, radishes, avocado, and red bell pepper into bite-sized pieces.
