  • 1 2-lb salmon filet
  • 1 Tbsp avocado oil
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • ½ red onion (finely chopped)
  • 1 jar sun-dried tomatoes (drained and chopped)
  • 5 ounces baby spinach
  • 6 ounces feta cheese crumbles
  • ⅓ cup pesto sauce (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and place the salmon filet on it. Drizzle with avocado oil and season with sea salt and garlic powder.
  3. Bake the salmon for 10 minutes.
  4. In a skillet over medium heat, sauté chopped onion in more avocado oil until soft, about 5-8 minutes.
  5. Add sun-dried tomatoes and spinach; cover until spinach wilts.
  6. Mix in feta cheese until slightly melted.
  7. Top the salmon with the vegetable mixture and return to the oven for an additional 8-10 minutes until cooked through (145°F).
  8. Optionally drizzle with pesto before serving.
